If there’s one thing I eat ALL summer long, its pasta salad. Literally throw anything refreshing in a bowl with pasta and I’m game.
But lately, I’ve been really into BLTs. And this is a weird one for me because *dare I say it* I’m not a huge bacon lover, could take it or leave it. One day Will came downstairs for lunch craving one and I happened to have a pack of bacon in the fridge, so figured I’d whip it up and we’ve been downing them ever since.
So when we planned to grill out this past weekend with neighbors, the infuencer came out in me and I felt the need to push my love of BLTs on them and thought what better way than in pasta salad form! Pasta salad is the perfect black canvas summer side, the possibilities are endless (and usually delicious)!
So when I had the idea for this, I really wanted it to be a mix of a BLT and a Caesar salad because yum! But alas, I was out of Caesar (because I eat it every dang day), so I checked out the fridge and decided to mix ranch and BBQ sauce because also yum! Turns out it was a good call! I’m still thinking Caesar would be good, so I’m adding both in the notes of the recipe! Your preference!
All in all, this is super easy summer time recipe and definitely a crowd pleaser!
BLT Pasta Salad
WHAT YOU NEED
- 1 16oz box cooked bow tie pasta (or whichever shape you like)
- 4 cups romaine lettuce, roughly chopped
- 2 medium tomatoes, cored and diced
- 6 strips of bacon, cooked and roughly chopped
- 1/2 cup dressing**
- Pepper, to taste
**i originally wanted to make this with ceaser dressing, but I was out so I mixed up some ranch and BBQ sauce we had on hand, it was delicious! you could go either way!!
HOW TO MAKE
1. Once your pasta is cooked, rinse it with cold water before mixing.
2. Combine all the ingredients except for the dressing. Once combined, fold in dressing of choice! Pepper to taste and serve!
I doubled the recipe and we had it for lunch the next day, basically a BLT in a bowl!
