Butternut Squash, Black Bean and Turkey Chili with Avocado Crema

Up until about a year ago, I hated black beans, loathed them actually. I wouldn’t go near them. NOW, I’ve neverbeenso obsessed. I don’t know what changed with my taste buds, but I regret all those meals that I asked “no black beans please.” I’ve been trying to incorporate them everywhere. This meal does just that, along with a million of my other favorite ingredients: turkey, butternut squash, tomatoes, avocado, cilantro, oh my.

The prep/cook time for this meal is longer than normal, but I was off so I didn’t mind the hour and a half; and it was well worth it! This chili would have been just fine on it’s own, but the avocado crema adds that zing and creates a flavor explosion. The heat from the chili and the coolness from the avocado is a beautiful combination.

Not to mention this is a health food power house!

Butternut Squash, Black Bean and Turkey Chili with Avocado Crema

Ingredients

Butternut Squash, Black Bean and Turkey Chili
3 teaspoons olive oil
1 lb 99% fat-free ground turkey
1 medium onion, diced
3 cloves garlic, minced
1/4 cup chili powder
1 tablespoon ground cumin
4 tablespoons tomato paste
Kosher salt
1 small butternut squash, peeled, seeded and cut into 1/2inch cubes (about 4 cups)
4 ripe plum tomatoes, chopped
Two 14-ounce cans black beans, drained and rinsed
1/4 cup chia seeds
Freshly ground black pepper
1 to 2 tablespoons white wine vinegar
Avocado Crema to drizzle

Avocado Crema
1 large ripe avocado
½ cup Greek yogurt
3 tablespoons half & half
2 ½ tablespoons freshly squeezed lime juice (from about 1.5 medium limes)
1 teaspoon honey
1 medium clove garlic
½ cup roughly chopped fresh cilantro
1 teaspoon cumin
½ teaspoon kosher salt

Directions

Butternut Squash, Black Bean and Turkey Chili
1. Heat 1 1/2 teaspoons of the oil over medium-high heat in a large Dutch oven.
2. Add the turkey and cook, breaking up chunks with the side of a wooden spoon, until browned, about 5 minutes.
3. Push the turkey to the edges of the pan, leaving the middle empty. Reduce the heat to medium and add the remaining 1 1/2 teaspoons oil, then the onion and garlic to the center of the pan. Cook, stirring occasionally, until the vegetables start to soften, about 3 minutes.
4. Add the chili powder and cumin and stir about 30 seconds.
5. Add the tomato paste and 1 teaspoon salt and stir until the paste begins to darken in color, about 30 seconds.
6. Add the squash, tomatoes and 4 cups water. Bring mixture to a boil, then adjust heat and reduce to simmer. Let simmer, uncovered, until the chili has thickened and the squash is tender, 40 to 50 minutes.

[While the chili is simmering, I made the avocado crema (recipe below). But you’re not done with the chili just yet, so make sure to go on to step 7!]

7. Once the chili is thickened and the squash is tender, stir the beans and chia seeds into the chili and heat through, about 5 minutes.
8. Season with an additional 1/2 teaspoon salt and a few grinds of pepper, then taste the chili and stir in up to 2 tablespoons of vinegar.
9. Spoon the chili into bowls and top each bowl with a few drizzles of avocado crema!

Avocado Crema
[steps continued from above]
1. Combine avocado and Greek yogurt in the bowl of a food processor. Process for 1 minute until smooth and creamy.
2. Add remaining ingredients and process again for 2 minutes until very smooth and only tiny bits of the cilantro are visible.
3. Transfer to a jar [for this recipe I used a squeeze bottle to drizzle] and refrigerate until the chili is ready. Can be stored in the refrigerator for 1-2 days.
*If you like the crema a bit thinner, add more half and half to the processor until you reach desired consistency*

Can We All Take a Moment to Applaud REI?

REI announced yesterday that they will be closing on Black Friday this year. You know that day after Thanksgiving where stores open at midnight and people are leaving their families to stand in lines for $50 off a TV. REI is going against the grain and paying their employees to go outside. REI wants the world to share how they go outside on Black Friday via the hashtag #OptOutside.

I think this is an inspiring concept and more companies should follow suit. In a short message from REI’s CEO, Jerry Stritzke,  “For 76 years, our co-op has been dedicated to one thing and one thing only: a life outdoors. We believe that being outside makes our lives better. And Black Friday is the perfect time to remind ourselves of this essential truth. We’re a different kind of company—and while the rest of the world is fighting it out in the aisles, we’ll be spending our day a little differently. We’re choosing to opt outside, and want you to come with us.” Read the entire message here.

They even have a countdown on their homepage, as of right now we’ve got 30 days and 17 hours. Let’s take a moment to applaud REI for being different and I hope to see you all outside on Black Friday!

Rainy Monday #OOTD

Rainy Monday. Nothing a few great accessories can’t fix. I’ve been obsessing over the Swell bottles for some time now, but I couldn’t pull the trigger on just one style (there are so many!). But for my birthday this week, Will pulled the trigger for me and got the adorable Grapefruit Linen from the Textile Collection. It’s been glued to my hands all weekend.

Baltimore is full of beautiful craftsmanship as seen in the picture below. Look at this combination of various bricks, wood & metal. Alone they are scraps, but together they tell a story. Brands below.

How to Propose to Your Bridal Party on a Budget [DIY]

Happy WEDnesday! I’ve got weddings on the brain today, probably because we just hit our negative 1 year anniversary! And thankfully we’ve got most of the big stuff booked! One of the events that I knew would take a lot of thought was deciding how I would propose to my half of the bridal party. Right after Will & I got engaged in April, I immediately started thinking of how I would ask my MOH and Bridesmaids to be in our wedding. These ladies are extremely special to me and have been by my side through everything; I knew it had to be something more than just a question.

Pinterest is beyond overwhelming with various sites to purchase cards/jewelry etc. to propose to your ladies, but that also tends to be pricey, especially if you’ve got six in your party like me. Being a MOH/Bridesmaid isn’t easy on the wallet either, so I wanted to show each of them just how much it would mean to me to have them standing by my side on one of the best days of my life. This is a completely DIY proposal that still packs the sentiment [I even got tears!] without breaking the bank [you’ve got plenty of time for that leading up to the BIG day]!

Because I’m having six ladies on my side, it was a little difficult finding items that were all exactly the same, so some I switched up based on their personalities and others I kept uniform, if possible.

I decided to pick tentative colors of Navy, Gold and Lavender and make gifts with the theme of those colors running through.

Here’s what I used:

Wood Box/Shadow Box
We’re going with a rustic theme, so I used unfinished wood for the boxes/crates. For the Bridesmaids, I used a hinged shadowbox from Michaels. I wanted the top to be glass, so they could immediately see what it was, but I had to go to a few different locations to find these, so if you can only find solid topped boxes, so work great too! For the MOH, I used a crate without a top, since there were a few more things I wanted to include.

Initial Letters
I wanted to personalize each box, so I got a letter for each of their names and spray painted them Navy. I tried gold, but all the spray paints I found were too light. The golds that were darker incorporated glitter and made a huge mess. So, Navy it was! For me, trial and error was key here.

Cards
Of course, I wanted to write a little something to each of them reminiscing about our friendship and telling them how I’d neverbeenso lucky to have them in my life! I got blank cards from Target and wrote a little something in each. But I also wanted to include the main question on the envelope. I was going to just write it, but decided to get crafty and emboss them. I’ve never used an embossing tool before [again, trial and error], but I think they turned out well! Essentially you write with a glue pen, layer the glue with glitter and then emboss [or heat] the writing, so that it gives some texture, but stays in place. I used gold glitter here to offset the navy.

Photos
I’m a big fan [and have a ton] of photos with these ladies, from embarrassing middle school days to drunk nights to being a grown up, so I knew those would be a staple in the presentation. I’m lucky enough that these ladies have had time to get to know Will very well and build a special relationship with him in their own way, so I included photos of each of them with him also. I found some gold binder clips at Target to hold the photos together.

Soaps
I LOVE soaps! The smells are so relaxing and they feel luxurious on my skin! I wanted the ladies to feel this as well! So I found some lavender colored soaps to go with the theme (and because they smell delightful). For the MOH, I included a couple fancier soaps and tied them together with string. Again, little enhances to the MOH’s box just gives her that bit of something special, you picked her as your MOH for a reason!

Notepads
I included a gold notepad and gold pencils I found at Target. These ladies will be keeping lots of notes for you, they’re going to need a place to keep track of it all!

Special Quote
I found these magnets that say “when I count my blessings, I count you twice!”

Important Info
When you ask your bridal party, you probably wont have a ton of wedding info just yet. But it’s likely you will have the names of all the bridesmaids and groomsmen, the venue, and the date, so include those on a piece of paper so your ladies have a couple details to work with. I just typed up each piece of information on a separate page in word, printed it on a small piece of cardstock, punched a hole in the corner and tied each piece together with string.

Flowers
I included some fake flowers from Michael’s to fill up empty space in each box. Go with a color you think you may use on your wedding, but remember nothing is set in stone, it’s still early!

Colored Candies
Include sweet treats that have wrapping coinciding with the color scheme set up for your gift! I used gold-wrapped Lindt truffles and gold-wrapped Ghirardelli squares.

Champs & Straws
Most liquor stores have small bottles of champagne and what better reason to toast than you making the decision to include this special person on your special day! I found some great gold/white paper straws at Michael’s. Cheers!

After all was said and done, I’d say each of these was roughly $20, which is an ultimate steal, IMO.

Comfort Zone Challenge: Amazon Rainforest

When we were planning our last big trip, we instantly knew it’d be in South America, but we weren’t exactly sure what country we’d visit. We did A LOT of research and finally decided we’d visit Peru. It seemed to have the most bang for our buck (and time) when it came to fitting in as much as humanly possible (we tend to do that).

One day, Will prompted me with the option of seeing the Amazon Rainforest. Immediately, I was intrigued, but also a bit frightened. “You want me to stay in a jungle?” I thought. “In a hut, with 100% humidity, surrounded by trees and wildlife with no connection to the outside world?” Some people would hear this and instantly think it a dream, being disconnected from the world, but me, I was a little taken aback and downright worried. Going to the jungle meant I had to leave my comfort zone, completely.

Long story short. We did it.

We ended up booking a trip that would allow us to visit the Amazon Rainforest, as well as Cusco, Macchu Picchu, and Lima [I’ll save those for another post]. We’ve always planned our trips ourselves, but this time we worked with Southern Explorations and they were awesome! Everything was flawless and they were a HUGE help with decision making.

We arrived to Puerto Maldonado and were instantly greeted by heat, humidity and, thankfully, our guide with a bus full of iced water bottles. I had neverbeenso thirsty. We said good-bye to our luggage, all except what we could fit in a small pack on our backs. We then hopped aboard a motorized canoe and made our way 30 minutes down the Madre De Dios River to our accommodations. We stayed at the Inkaterra Reserva Amazonica Lodge.

They weren’t kidding when they said we’d be in the middle of the jungle. Lush trees canopied over us as we walked along the tree-stump lined path, while wildlife went on about its business around us. We were taken to our cabins, each couple had their own, and it was legitimately a hut with screened in doors and windows, a bed with a draped mosquito net, a shower and toilet. Immediately, I thought “what did I get myself into…” And then I told myself to just let go…and let go I did.

The lodge blew me away. Although they were smack dab in the middle of a jungle, they provided 5 star service and food. Three meals a day, each morning a buffet of local delights, while lunch and dinner were plated meals selected from the various menu options. The Main Hall also had a fully stocked bar, where the Pisco Sours were on point. They offered several varieties. However, I fell in love with the Chilcano, the Peruvian version of a Moscow Mule, a mix of pisco, lime juice and ginger ale.

There was no internet connection at the lodge, and for someone who is completely connected, it took some getting used to. But by the end, I didn’t even want to see my phone again. I spent quality time in the here and now and truly connected with those around us. We met so many great people, staff and guests alike. It started to feel like a family. We did most of the excursions with the same couple and always saw familiar faces in the main hall at meal time.

The cabins grew on me. Laying in the hammocks, looking out over the river, hearing nothing but the wildlife around me, it was peaceful. It turned out to be such a spiritual experience. Granted, nights were still a little rough being that it was 80 degrees, and we were sleeping with nets over us to protect from mosquitos. But soon morning came and we were greeted with some of the most amazing sunrises I had ever seen; it was worth it.

The Excursions

The lodge offered 12-15 excursions for people to pick from based on activity level. There were serveral guides at the lodge who stayed with the same guests for most of the trip. Alberto and Michael were our guides for all of the excursions. We did SO much in the 3 full days we spent in the jungle. There was absolutely no shortage of things to do. We were exhausted by the end of every night.

Lake Sandoval – We hiked 2 miles each way, mud up to our knees in 100 degree weather and we had to cover up or else the mosquitos would tear us to shreds. Sounds awful right? Well partly it was, but reaching Lake Sandoval was such a reward. We canoed out to a spot on the lake and saw a family of otters playing and catching fish, saw at least 100 howler monkeys playing on the vines in the jungle, and colorful macaws flying overhead. It was like nothing I’ve ever seen. Sure, you see wildlife in the zoo, but this wasn’t the zoo, this was wildlife in its own habitat.

Canopy Tour – We climbed a 95 foot tower and trekked all along the treetops via suspension bridges, connecting 8 platforms. The views from above were outstanding and we learned a lot from Alberto along the way.

Piranha Fishing – By far my favorite excursion. This one takes a full day, but well worth it. We were taken out by boat approximately 2 hours from the lodge. Here, we picked up our stick fishing rods and immediately started fishing for piranha. We caught a few right away! The guide took us to different spots on the lake to try our luck. Every hour, our guide would take us over to a spot in the jungle to drop off the piranha we had caught. After several hours of fishing, he took us to that same spot where a chef had prepared a full spread of food and wine, including the piranha we caught! What a cool experience! On the way home from this trip, we stopped by a village and dropped off all the leftover food and drink we had to locals who seemed to expect this. I had a lot of respect for the lodge to not waste these leftovers and share them with the community.

Rainforest By Night – Let me start out by saying this was NOT my favorite excursion. It was pitch black, we were following a guide into the depths of the jungle with only flashlights while he pointed out tarantulas, other big spiders, scorpions, the list goes on. While I didn’t necessarily enjoy the sights of this one, there was still something surreal about being in a jungle at night surrounded by all the wildlife that wakes up after dark.

German Chocolate Cookies

My work throws an annual Oktoberfest party and being that I love themes, I decided to bring a dish that honors the German tradition. The party is outside and for roughly 30 people so I needed a dish that could fill a crowd, transport easily and go with the theme. I instantly thought German Chocolate Cupcakes, but I didn’t want to have to worry about the excess wrapper trash, so I figured why not go the same route, but with cookies!

These cookies are moist and chewy and go great with beer!

The frosting took a little trial and error for me. I didn’t stir constantly at first, so the liquid never thickened. Make sure to stir, stir, stir! BUT, it is so worth it! I’ve neverbeenso hungry for frosting!

German Chocolate Cupcakes

  • Servings: 4 dozen
  • Difficulty: easy

Ingredients

Chocolate Cookie
2 sticks butter, softened
1 cup light brown sugar
1 cup granulated sugar
2 teaspoons vanilla extract
2 large eggs, beaten
2 1/4 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
Pinch salt

German Chocolate Frosting
1 cup evaporated milk
1 cup sugar
3 egg yolks
½ cup butter
1 teaspoon vanilla
1 1/2 cup sweetened shredded coconut
1 1/2 cup chopped pecans

Directions

Chocolate Cookie
1. Preheat the oven to 375 degrees F. Line baking sheets with parchment paper.
2. In a stand mixer or large bowl using a hand mixer, blend the butter, brown sugar, granulated sugar, vanilla and eggs. In a medium bowl, stir together the flour, cocoa, baking soda and salt. Gradually add the flour mixture into the butter mixture and blend until combined.
3. Drop the dough by tablespoonful onto the prepared baking sheets, 12 cookies per sheet, and bake 10 minutes. Cool on a baking rack.

German Chocolate Frosting
1. Add evaporated milk, sugar, egg yolks, butter and vanilla to a large pan and place on stovetop over medium heat.
2. Stir so that it becomes well combined. Stir constantly (this is important!!) until thickened, this takes approximately 11-15 minutes.
3. Once thickened remove from heat and add coconut and pecans. Mix until thick enough to spread.
4. Spread frosting over the tops of cooled cookies.

ESPN E:60 is Back: Silent Night Lights

ESPN E:60, known for telling the best stories in sports, returned for its season premiere last night.  ESPN E:60 always has a way of making me shed at least one tear [and usually many more], watching the fight people have and the adversity they overcome, and last night was no different. I only caught the last story, but it was a true inspiration. It covered California’s California School for the Deaf (CSD)’s high-school football team, the CSD Eagles. They saw themselves as underdogs and walked away as heroes.

California has a deaf student population of roughly 17,000 and two schools for the deaf in the state. Fremont is located in Northern California and has nearly 500 students, which I can say is more than I expected, but after seeing the numbers, it really is a small percentage of the total deaf population. Some of these students were born deaf, others lost their hearing later in life, but most started out at public schools where they recounted instances of bullying; this was the first all-deaf environment most of them had ever seen. Lets face it, kids are jerks, they don’t realize what they say impacts people, but in this environment, they were able to shine because they were all seen as equal.

The opponents didn’t think the small deaf school stood a chance, but the Eagles turned their weakness into a strength. The skill at which these students and coaches were able to sign was remarkable; they had a playbook of 150 plays all of which were signed. The Eagles’ communication was on point, allowing them to open their 2014 season 5-0, shutting out opponents 227-0. Then they lost two games and needed to win their last three to make it to the playoffs. And you guessed it, they did [insert said tear]. This is when all of my heart and soul starts rooting for these people, these kids, this team of high schoolers, who were so strong, stronger than I ever was.

They ended their season 8-2 and were on to the playoffs. The few seniors on the team knew this was their last chance to win. In the playoffs, it was back and forth, they were down and then they miraculously scored two touchdowns going into halftime to take the lead. I thought they had it, they had won. And then, the rival scored and the Eagles lost 15-14. That was it, they were out. Just like that. Of course, this happens all the time. You win some, you lose some right. The kids were crushed, but they held their heads high. The win didn’t take away their But what was even more inspiring, was their ability to overpower limitations. They truly felt blessed with the life they were given, as they should be, but there are so many of us who take what we have for granted.

These kids made me want to be better, made me want to appreciate life more; I’ve neverbeenso inspired. I can already tell these kids are destined for greatness. Yes, maybe they had to attend a different school, but look at what it did for their strength and confidence, which was being crushed in the regular schools. I think this is a story adults and kids alike can learn from.
